Nothing is more refreshing on a hot day than an icy sweet-tart sorbet! Combined with a few dates, this strawberry rhubarb sorbet is an all-natural, no sugar added, dairy free, gluten free, grain free treat that is compliant with virtually all healing diets, including the paleo autoimmune protocol (AIP), low-FODMAP, and the Specific Carbohydrate Diet (SCD).
I was so honored to be asked to create this recipe and tell a little bit of my story of healing from Crohn’s disease through diet as a guest post on Sarah Ballantyne’s blog The Paleo Mom. I’ve been following Sarah since the beginning of my journey, when I transitioned from a standard diet to SCD, and then to AIP, and finally to the clean paleo-inspired diet I now eat. In particular, her writings on FODMAPs and how a low-FODMAP diet can be helpful for people with digestive issues were extremely helpful for me when I was fine tuning my diet. Though I am now able to eat most high FODMAP foods and have reintroduced most of the paleo foods excluded on AIP, I wanted to pay homage to her virtual support that helped me get to this point by creating a tasty treat recipe that was both AIP and low-FODMAP and was also SCD-legal (a combination that can be very tricky!).
