What’s so great about this book?

That’s a feature I always love to consult in cookbooks, since I’m frequently buying something special and then forgetting exactly what I was intending to use it for.

As I mentioned above, I contributed recipes to this collaborative cookbook as well, and had a blast doing the development for them. I decided to use the opportunity to really challenge myself and volunteered to make things that I wasn’t even sure I’d be able to pull off! Top of that list was a grain free sushi with legit sticky “rice”! I’m also very proud of the gyros (obviously, for the Greek section) and the apple gallette (my French contribution).

Irish Stew – from The Global Paleo AIP Kitchen

Description

Enjoy this hearty lamb stew that replaces potatoes with white sweet potatoes. It’s such a warming and satisfying dish!


Ingredients

Scale
  • 3 pounds (1.5 kg) lamb shoulder
  • ¼ cup (32 gr) arrowroot flour
  • 1 teaspoon (5.4 gr) sea salt
  • 2 medium yellow onions, chopped
  • 3 carrots, sliced
  • 4 white sweet potatoes, chopped
  • 1 ½ (0.75 gr) teaspoon dried thyme
  • 4 cups (1 liter) beef stock

Instructions

  1. Preheat the oven to 325° Fahrenheit / 160° Celsius.
  2. Coat lamb with arrowroot flour and sea salt.
  3. Chop all the vegetables.
  4. Arrange lamb in the bottom of a casserole dish.
  5. Layer in the onions, carrots, and sweet potatoes.
  6. Sprinkle in the thyme. Pour on the beef stock.
  7. Cover and cook for 3 ½ hours.

Sounds delicious! Is the lamb meat cut up into cubes before cooking? Sort of looks like it in the photo. I continue to enjoy your blog & recipes. Thank you so much!

Hi! This looks so delicious. I’m attempting it this week with the Instant Pot instead of slow cooked. Any tips?
