Description
Shrimp offers some really important nutrients for the AIP diet. Marinate it in a special spice mixture and thread onto skewers so you can mix up your summer grilling repertoire!
Ingredients

- 1 tablespoon Enlightened Curry Powder (or make your own homemade version)
- juice and zest of 1 lime
- 2 tablespoons olive oil
- 1 pound raw shrimp, deveined and shelled but with tail on
- 1 lime, cut into wedges
Instructions
- Combine curry powder, lime juice and zest, and olive oil in a large covered container or ziplock bag. Add shrimp and toss to coat. Place in refrigerator to marinate for 1 hour.
- Preheat grill to high heat.
- Remove shrimp from marinade, shaking off excess liquid but trying to keep as much of the seasoning as possible still coating the shrimp.
- Thread shrimp onto wooden skewers, about 4-6 per each skewer so that you end up with 4-6 skewers.
- Place skewers on hot grill and grill for 2-3 minutes.
- Carefully flip each skewer and grill for another 2 minutes or until shrimp are completely opaque.
- Serve with lime wedges.
