Grilled Curry Shrimp (AIP, SCD)

Description

Shrimp offers some really important nutrients for the AIP diet. Marinate it in a special spice mixture and thread onto skewers so you can mix up your summer grilling repertoire!


Ingredients

  • 1 tablespoon Enlightened Curry Powder (or make your own homemade version)
  • juice and zest of 1 lime
  • 2 tablespoons olive oil
  • 1 pound raw shrimp, deveined and shelled but with tail on
  • 1 lime, cut into wedges

Instructions

  1. Combine curry powder, lime juice and zest, and olive oil in a large covered container or ziplock bag. Add shrimp and toss to coat. Place in refrigerator to marinate for 1 hour.
  2. Preheat grill to high heat.
  3. Remove shrimp from marinade, shaking off excess liquid but trying to keep as much of the seasoning as possible still coating the shrimp.
  4. Thread shrimp onto wooden skewers, about 4-6 per each skewer so that you end up with 4-6 skewers.
  5. Place skewers on hot grill and grill for 2-3 minutes.
  6. Carefully flip each skewer and grill for another 2 minutes or until shrimp are completely opaque.
  7. Serve with lime wedges.
