I just can’t help myself when it comes to apple crumble (or “apple crisp” – whatever you want to call it!). This is not the first recipe I’ve created for an AIP-compliant apple crumble… in fact, it isn’t even the second! But this is the best one so far… in part because it is scaled to make just two servings, which is helpful when you love this dessert so much that you can’t trust yourself not to eat the whole pan. It’s also the best, because it has the tastiest, best textured, and most nutritious topping yet, thanks to its key ingredient: tigernut flour.
Why tigernut flour?
You actually have many options these days for AIP-friendly flour, but tigernut flour stands apart from them all because it also has some nutritional value. The little “nuts” are actually ancient tubers that contain resistant starch, which is a prebiotic that helps feed beneficial bacteria in your intestines. It’s also a good source of vitamins E, C, and B6 as well as the minerals magnesium, iron, and zinc.
Where to buy tigernut flour?
You will probably find tigernut flour at your natural or organic market, or even a well stocked grocery store (here on the east coast we can get it at Wegman’s). But my favorite place to buy it and other AIP-compliant baking ingredients is the online store, ShopAIP.
