Sunrise Beef Hash (AIP)

Good morning! What’s for breakfast? If you are at my house, chances are good it’s some kind of an AIP breakfast hash. Frequently it’s a combination of leftovers and other odds and ends that I want to use up, but I do have a few favorite “recipes” that mostly exist in my head… until now!

Today I am sharing the combination that I fondly call “sunrise hash” – not just because I love eating it while watching the morning sky get brighter, but also because the vibrant colors and flavors remind me of a perfect sunrise over a green summer horizon. As I type this, it is mid-January and we just had our first significant snow of the season, so I’m particularly enjoying fantasizing about that!

You could make this breakfast hash with any ground meat you choose. I encourage all of my clients to use the best quality meat they can get and ground grass fed beef is what gets you the most nutritional “bang” for your dollar, so that what’s I featured here. If you are new to eating grass fed beef, you may notice that the flavor is different than the conventionally raised beef you are used to eating. Over time you will come to think of this as the “normal” flavor of beef, but if the adjustment is tough for you, a recipe like this with lots of vibrant flavors will help.

I used a combination of white and orange sweet potatoes because I was going for a pretty combination of colors, but feel free to use all of one or the other if preference or availability require it. You could even use purple sweet potatoes if you wanted! In a recipe like this the total amount is also not very important – I made it with 2 average sized sweet potatoes that filled about 3 cups total after I cubed them, but less or more would also be fine.

TIP: You can peel and cube your sweet potatoes ahead of time to make this preparation even faster! Sometimes I spend an hour or so on Sunday preparing vegetables for the meals I plan to make later in the week.

Usually recipes using kale will direct you to remove the leaves from the stem, but I like the way the stems add a texture variety to this dish, so I suggest just chopping them with the leaves unless yours are particularly tough.

Description

This simple hash is packed with flavor and nutrients. It’s a great answer to the question: “but what can I eat for breakfast on AIP?” Make it ahead of time and store in the refrigerator for quick meals in the morning.


Ingredients

Scale
  • 1 tablespoon coconut oil or other fat
  • 1 small onion, chopped
  • 2 cloves garlic
  • 1/2 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon turmeric
  • 1/2 teaspoon salt
  • 1 pound ground beef (preferably grass fed)
  • 12 medium sweet potatoes, peeled and cut into small cubes
  • 1 bunch (about 10 ounces) kale, chopped into bite sized pieces
  • 1 tablespoon lemon juice

Instructions

  1. In a cast iron skillet, heat coconut oil over medium heat. Add onions and cook until softened and becoming translucent (about 5 minutes).
  2. Stir in garlic, cinnamon, ginger, turmeric, and salt. Cook until fragrant (about 1 minute) and then immediately add ground beef. Break up beef as it cooks with a wooden spoon and stir as needed.
  3. When beef is just barely cooked through add sweet potatoes and cook, continuing to stir frequently, until potatoes are softened (about 5-7 more minutes).
  4. Stir in kale and allow to cook until wilted and softened (about 3 minutes). Check sweet potatoes for doneness – if they are not as soft as you desire, cook longer.
  5. Stir in lemon juice. Taste and add more salt if desired.
